Roasted Zucchini Tuna Boats

There’s nothing better than enjoying summer’s bounty of fresh vegetables. That’s why you should treat yourself to this Roasted Zucchini Tuna Boat recipe. From farm to table, combine zucchini and bell pepper with  Solid White Albacore Tuna for a solid meal for the season.

Servings: 2 servings


1 5 oz can of Solid White Albacore Tuna In Water, drained
1 zucchini
1 red pepper, roasted
1 tomato, ripened
1 scallion
½ cup cheddar cheese, shredded
½ cup of olive oil
1 teaspoon paprika to taste
1 teaspoon onion powder to taste
1 teaspoon oregano to taste
1 teaspoon of salt & pepper to taste


Start by lining a baking sheet with parchment paper. Preheat the oven to 400 degrees.

Prep the vegetables by washing and drying them all. Cut zucchini into halves lengthwise. Use a spoon to scoop out and discard the seeds.Chop the scallion, roasted red pepper, and tomato finely. Mix with drained tuna in a large bowl.

Position zucchini halves on the baking sheet facing upwards. If leaning to one side, add balled up pieces of tin foil to keep it in place.

Scoop tuna mixture into zucchini boats. Once filled, add cheddar cheese on top and sprinkle seasonings to taste. Drizzle extra virgin olive oil to finish. Place in oven and bake for 20 minutes until zucchini is fork tender. Serve and enjoy!
