Tuna Guacamole With Baked Zucchini Chips

Move over, chips and dip, because here comes Tuna Guacamole with Baked Zucchini Chips. Once you try this low-fat tuna guacamole recipe with Bumble Bee® Solid White Albacore tuna,  you’ll never go back. Stock up and make a few batches of zesty lemon pepper zucchini chips ahead of time. That way you’re set for your next snack attack.

Servings: 3 servings


2 cans (5 oz) Bumble Bee® Solid White Albacore tuna, drained
1 large zucchini
2 avocados
¼ cup of sweet bell peppers, finely chopped
1/3 cup cucumber, diced
1/3 cup green onion, finely diced
½ cup of cucumbers, chopped
½ cup of lemon juice
½ cup vegetable oil
3 tablespoons lemon pepper seasoning
1 teaspoon of salt & pepper to taste


Preheat the oven to 200 degrees.

Prep the vegetables and cut them all up finely, except for the zucchini. Set aside for later. Use a mandolin or sharp knife to slice zucchini into thin medallions. Brush both sides of the zucchini slice with vegetable oil lightly. Sprinkle lemon pepper seasoning onto the chips lightly. Note: less is more.

Bake chips in oven for approximately 2 hours, flipping them halfway and ensuring they are not too dry or dark. Cool before serving or store for later use.

Mash the avocados in a medium sized bowl before mixing in the chopped vegetables. Fold in Solid White Albacore Tuna. Season with lemon juice, salt, and pepper to taste. Mix again and serve with Baked Zucchini Chips. Enjoy!
