Zesty Tuna Avocado Cups With Salsa

The New Year is already challenging enough without having to worry about what to eat all the time. Make your next bite effortless with this Zesty Tuna Avocado Cups with Salsa recipe, using Bumble Bee® Solid White Albacore Tuna. You can eat this fun recipe on its own, or with chips as a creatively delicious snack.

Servings: 2 servings


1 5-oz can of Bumble Bee Solid White Albacore Tuna, drained
1 whole avocado, pit removed
1 cup of greek yogurt
2 tablespoons of lime juice
1/4 cup of tomatoes, diced
1/4 cup of onion, minced
1/4 cup of yellow pepper, diced
1/8 cup of cilantro, minced
1 teaspoon of salt and pepper to taste


Cut the avocado in half from top to bottom before removing the pit. Spoon out the flesh and save the skins. Mash the avocado flesh in a bowl before adding onion, tomato, half the lime juice, cilantro, salt, pepper, and yellow pepper. Mix until combined. Fold tuna into the avocado mixture and scoop into the avocado skins.

Combine other half of lime juice, greek yogurt, cilantro, salt, and pepper for a tasty yogurt sauce to top the avocado cups.  Combine well before adding a dollop to the top of the avocado cups and drizzle over with olive oil. Serve and enjoy!
