Tuna Tartine Sandwich

Servings: Serves 4



1 can (5 oz) Prime Fillet® Solid Light Tuna, Tonno in Olive oil, drained and chunked

8 thin slices baguette

1/4 cup extra-virgin olive oil

Salt and pepper, as desired

1/2 cup drained pitted green olives

1/2 can (2 oz) anchovy fillets, drained

1/2 teaspoon drained capers

1/2 teaspoon minced garlic

1 teaspoon chopped fresh Italian parsley

1 tablespoon extra-virgin olive oil

1/4 teaspoon saffron

1/8 teaspoon salt

1 tablespoon hot water

1 tablespoon mayonnaise

1 heirloom tomato, sliced or wedged

Fresh Italian parsley for garnish


Preheat oven to 300 degrees F. Place sliced baquette on baking sheet, brush with olive oil; sprinkle with salt and pepper as desired. Bake for 10 minutes or until crispy with little to no color. Set aside. For the Olive Tapenade, combine olives, anchovies, capers and garlic, puree until smooth. Add chopped parsley and olive oil, stir to combine. For the Saffron Aioli, dissolve salt in hot water and add saffron to steep for 10 minutes. Remove saffron threads from water. Add saffron water to mayonnaise and mix thoroughly. Spread crispy crostini slices with olive tapenade, top with tomato, tuna chunk and saffron aioli. Garnish with fresh parsley. Serves 4.
