Tuna Stuffed Peppers

This protein packed Tuna Stuffed Peppers recipe will be added to the weekly lunch menu after you try it. With the addition of Bumble Bee® Solid White Albacore in Water, this recipe is easy to prepare and delicious.

Servings: 6 servings


2 cans (5 oz.) Bumble Bee® Solid White Albacore in Water, drained
6 red, green, or yellow bell peppers, seeded and stemmed
3 cups of cooked brown rice or quinoa
2 ½ tablespoons of lemon juice
½ cup of red onion, diced
¼ cup of parsley
¼ cup of lightly toasted pine nuts
½ cup of feta cheese
¼ cup of sliced black or kalamata olives
¼ cup of sliced sundried tomatoes
¼ cup of raisins
2 ½ tablespoons of olive oil
Salt and pepper to taste


Line a baking sheet with wax paper. Preheat oven to 375° F.  

Cut off the tops of all six bell peppers are remove seeds. 

In a mixing bowl add lemon juice to cooked rice or quinoa. Add drained tuna, onion, parsley, feta cheese, olives, and tomatoes, nuts, and raisins. Mix until all ingredients are consistent within the blend. Add olive oil and salt and pepper to taste. Continue to stir. 

Scoop your tuna mix into each bell pepper. Place peppers on baking sheet, four inches away from one another.  

Bake until tuna mix is thoroughly heated, about 30-35 minutes. 

Serve while warm.
