Tuna Spinach Salad

Simplicity is what makes this dish so delightful and the interaction of all seven ingredients makes this dish so fantastic. The sweet tomatoes, the buttery avocado, the crunchy red onion, the savory tuna, hard-boiled egg and the earthy mushrooms all showcase their own personalities yet play deliciously well together.

2 cans or pouches (5 oz each) Solid White Albacore in Water, drained and flaked

1 bag (6 oz) fresh spinach leaves

10 mushrooms, washed and sliced

1/2 medium red onion, thinly sliced

4 Roma tomatoes, thinly sliced

1 avocado, peeled and sliced

1/2 cup vinaigrette salad dressing

1 boiled egg, wedged


In a large bowl, combine spinach, mushrooms, onion, tomato, avocado, tuna and dressing. Toss gently, top with egg.
