Tuna Salad with Zesty Orange Dressing

2 cans or pouches (5 oz) Tuna, drained and flaked

1 small red onion, julienned

1 small red bell pepper, julienned

1/4 cup sliced pimiento-stuffed green olives

8 cups mixed salad greens

1/3 cup slivered almonds, toasted


1/4 cup olive oil

1/4 cup red wine vinegar

1 tablespoon minced garlic

3 small seedless oranges, peeled, sliced and wedge cut triangles


Combine tuna, red onion, bell pepper and olives. Toss mixture with the dressing blend of olive oil, vinegar, garlic and oranges. Divide salad greens in 4 bowls and top with tuna salad mixture. Garnish with almonds.
