Tuna Salad Rustico

So simple to make you’ll enjoy serving this salad again and again. The fresh asparagus and sweet tomatoes on a bed of crisp greens are topped off with capers, olives and balsamic vinaigrette for a Mediterranean flavor.

Prep Time: 20-25 minutes
Servings: Serves 4


2 cans or pouches (5 oz) Tuna, drained and flaked

1 pound fresh asparagus

3/4 cup balsamic vinaigrette

2 tablespoons vegetable oil

1 sweet onion, thinly sliced

4 (1 inch) thick slices crusty bread

2 tablespoons extra virgin olive oil

2 cups chopped tomatoes

1/4 cup drained capers (optional)

1/4 teaspoon salt

1/4 teaspoon ground black pepper

4 ounces mixed baby field greens


Steam asparagus for 3 minutes; marinate in 1/4 cup vinaigrette. Fry onions in vegetable oil in small saucepan until golden brown. Brush bread generously with olive oil. Broil or grill until lightly toasted. Combine remaining vinaigrette with tuna, tomatoes, capers, salt and pepper. On each plate, place toasted bread slice, mound with tuna mixture, salad greens and asparagus. Top with fried onions and remaining vinaigrette.
