Tuna Rangoons

Savory tuna combined with Asian flavors of soy sauce and scallions and the creaminess of cream cheese make this appetizer feel decadent. Ready-made wonton wrappers are super convenient and baking instead of frying the wontons takes this traditionally high-calorie appetizer to a lighter level.

Prep Time: 30 minutes
Servings: 8

2 cans (5 oz) Prime Fillet® Albacore Tuna with Jalapenos & Olive Oil, drained

6 tablespoons low-fat plain Greek yogurt

6 tablespoons reduced fat cream cheese or Neufchatel cheese

1 1/2 tablespoons reduced sodium soy sauce

1/4 cup chopped scallions, about 2 scallions

2 garlic cloves, minced

1/4 teaspoon black pepper

32 wonton wrappers

Small bowl of water

Nonstick cooking spray

Preheat oven to 400 degrees F. In a medium bowl, mix the tuna, yogurt, cream cheese, soy sauce, scallions, garlic, and black pepper. Lay the wonton wrappers on a clean surface. Spoon 1 heaping teaspoon of the tuna mixture onto the center of each wrapper. Use a pastry brush or your finger to moisten two of the four sides of the wrapper with water. Fold wrapper over so that the corners meet and press firmly to seal the tuna filling inside. Place all filled wontons on a wire rack set on top of a cookie sheet sprayed with cooking spray and bake for 12 minutes, or until they begin to turn a light golden brown.
