Breakfast food is good for any time of the day! This Tuna Omelet Recipe made with Bumble Bee® Solid White Albacore in Water can be enjoyed for breakfast, brunch, or brinner (breakfast for dinner).

1 1/2 cans (5 oz) Bumble Bee® Solid White Albacore in Water
9 eggs
½ lb of asparagus
½ cup of diced parsley
2 chopped green onions
¾ lb of chopped red potatoes
3 cherry tomatoes
2 tablespoons of olive oil
2 teaspoons of salt and pepper


Preheat oven to 450. Heat cast iron skillet on medium heat on a burner. Once pan reaches medium-high heat, add oil.

Toss red potatoes, seasoned with salt and pepper to your liking, in pan. Place cast iron skillet in oven and cook for 12-16 minutes.

Once potatoes have reached a golden brown, add asparagus to skillet and cook on stove top for 3-5 minutes. Stir in tomatoes and cook for another minute. Add parsley and tuna, stirring until tuna chunks have broken apart.

Turn on broiler to high. Crack eggs in mixing bowl and stir well. Pour eggs over all ingredients within the skillet and turn heat to medium low. Cover pan and cook for 5-8 minutes.

Place skillet into oven and broil for approximately 2-4 minutes. Watch carefully and remove once the crust turns golden brown.

Once removed from oven broiler, let sit for 3-4 minutes. Finish off by topping the omelet with chopped green onions.
