Cheesy Tuna Stuffed Potatoes

These Cheesy Tuna Stuffed Potatoes are perfect when you are cooking for one or need a quick side to bring with you to a holiday party, highlighting Bumble Bee® Solid White Albacore Tuna. Servings: 4 baked potatoes


1 5 oz. can of Bumble Bee® Solid White Albacore Tuna, drained
4 red potatoes, or your favorite baking potato
1 can of cheddar cheese soup, condensed
¾ cup of cheddar cheese, shredded and divide into portions
1 teaspoon of salt and pepper to taste


Prep your kitchen for cooking! Preheat oven to 350 degrees. Wash the potatoes by scrubbing and carefully poke holes in each using a fork. Heat the potatoes in the microwave on high for 10 minutes until they are thoroughly soft. Set the potatoes aside to cool. Once cool, cut the top of the potatoes off. Scoop the insides of the potatoes out and into mixing bowl. Be careful to not break the skin.

Add the tuna, shredded cheese, condensed cheddar cheese soup, and salt into the mixing bowl. Combine mixture well and then scoop back into the hallowed potatoes. Sprinke the the remaining cheddar cheese on top. Bake potatoes for 10 minutes until the cheese has melted. Broil for an additional 2 minutes if you like browned cheese. Let cool for 3 minutes. Serve and enjoy!
