Smoky Salmon Latkes



This flavorful twist on a classic will quickly become a family favorite. Greek yogurt replaces sour cream and capers add fat-free flavor to keep these latkes a little lighter.

Ingredients

1 can (5 oz) Prime Fillet® Atlantic Salmon, drained and flaked

1 large russet potato, un-peeled and grated and squeezed of excess water

1/3 cup grated red onion

1 large egg

1 teaspoon Dijon mustard

3/4 teaspoons smoked paprika

1/8 teaspoon salt

2 tablespoons whole wheat flour

1 tablespoon olive oil

2 tablespoons low-fat plain Greek yogurt, divided

2 teaspoons capers, divided


Directions

Combine the onion, potato, and salmon, stirring gently. Whisk egg, mustard, paprika, and salt together until smooth. Stir the egg mixture into the potato mixture until well combined. Stir the flour in, until the mixture becomes sticky. Heat the olive oil in a large skillet over medium-high heat. Form the potato mixture into 6 cakes and cook each one in the oil until browned, about 4 minutes. Flip patties over and cook an additional 4 minutes, or until browned on both sides and cooked through. Top each patty with 2 teaspoons yogurt, 1/3 teaspoon capers, and a sprinkle of smoked paprika (optional).
