Shrimp Puff Appetizers

Servings: Serves 6 - makes 20-22


2 cans (4 oz) Tiny Shrimp, rinsed and drained

2/3 cup light mayonnaise

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh basil

4 egg whites, stiffly beaten

1 thin loaf of French bread or baguette, cut into 20-22 slices


Preheat oven to 350 degrees F. In medium bowl, combine shrimp, mayonnaise, cheese and basil. Fold beaten egg whites into shrimp mixture. Place bread slices on ungreased baking sheet. Spoon shrimp mixture on bread slices. Bake 20 minutes or until golden brown. Serve warm. Makes 20 -22 appetizers.
