Salmon and Green Chile Casserole

1 can (14.75 oz) Salmon, drained and flaked (remove skin and bones as desired)

3 fresh whole green Anaheim chile, seeded and diced

1 pound shredded Monterey Jack cheese

12 large raw eggs

1 carton (16 oz) sour cream


Preheat oven to 350 degrees F. Prepare a 9 x 13 inch baking dish with non-stick vegetable spray coating. Layer diced chiles, salmon and cheese in baking dish. Whisk together eggs and sour cream and pour over top. Bake 45 minutes or until it puffs and is lightly browned. Remove and let cool slightly before cutting.
