Salmon and Mushroom Fettuccini

Servings: Serves 4


1 can (14.75 oz) Salmon, drained and flaked (remove skin & bones as desired)

1 package (8 oz) dry fettuccine or spaghetti pasta

2 cloves garlic, pressed

2 cups sliced mushrooms

1 cup chopped green onion

1/2 tablespoon dry oregano

1/2 tablespoon dry basil, crumbled

1/2 tablespoon dry rosemary, crumbled

1/2 cup butter

1/2 cup extra virgin olive oil

1/3 cup dry white wine

1 medium zucchini, julienne sliced

2 tablespoons capers

2 tablespoons chopped fresh parsley

1/2 cup shredded Parmesan cheese


Prepare pasta according to package directions. Set aside. Heat olive oil and butter in medium sauce pan, saute garlic, mushrooms, green onion, oregano, basil and rosemary until mushrooms are golden. Stir in wine, zucchini and capers. Simmer 1-2 minutes or until zucchini is tender crisp. Remove from heat and gently stir in salmon. Toss mixture with fettuccine. Top with parsley and Parmesan cheese.
