Salmon and Cucumber Salad

Servings: Serves 2


1 pouch (5 oz) Bumble Bee® Premium Wild Pink Salmon Skinless & Boneless

3 tablespoons Greek yogurt

2 tablespoons red wine vinegar

Salt and pepper, to taste

1/4 cup sliced cucumber, peeled and seeded

3 tablespoons thinly sliced celery

3 tablespoons thinly sliced radish

1 tablespoon chopped fresh dill

3 tablespoons olive oil

1 tablespoon lemon juice

3 cups salad greens

Fresh dill for garnish


In a medium bowl, combine yogurt, red wine vinegar, salt and pepper. Whisk until smooth. Toss in cucumber, celery, radish and dill. Add half of the salmon to the mixture with the olive oil and lemon juice. Gently toss to mix. Plate bed of salad greens and top with salmon cucumber mixture. Top with remaining salmon and fresh dill for garnish.
