Salmon and Barley Cakes with Sauteed Mushrooms

With a hearty texture, delicate flavor, and meaty mushroom topping, these barley cakes will satisfy carnivores and veggie lovers alike. The crispy outside gives way to tender chunks of salmon, sweet sauteed onion, and just a hint of savory herbs, and can be served as a main course or appetizer sized cakes.

1 can (5 oz) BUMBLE BEE® Prime Fillet® Atlantic Salmon, drained

3/4 cup cooked semi-pearled barley

1 egg white

1 teaspoon dried oregano

1/4 cup chopped red onion

3 tablespoons whole wheat flour

1/4 teaspoon salt, divided

1/2 teaspoon black pepper, divided

1/2 cup sliced cremini mushrooms

2 teaspoons butter, divided

1/4 teaspoon garlic powder

1 teaspoon balsamic vinegar


In a medium bowl, combine salmon, barley, egg white, oregano, onion, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Stir until well mixed. Stir in flour, until mixture becomes sticky. Form into patties and refrigerate 10 minutes, or until firm. In a small skillet, heat butter and saute mushrooms until soft, about 5 minutes. Stir in garlic powder and vinegar and set aside. Make the salmon mixture into 3 patties (or 10 mini patties if making appetizer portions) and saute in 1 teaspoon butter over medium-high heat, flipping once, until browned on both sides, about 8 minutes total. Serve patties topped with mushroom mixture.
