Quick Mexican Tuna Salad

Sometimes you have to change it up with the classics. Add some spice and Mexican flare to your tuna salad with this Quick Mexican Tuna Salad recipe, featuring Solid White Albacore Tuna. With creamy avocado in place of mayonnaise, you can lighten up this old favorite without missing any flavor.

Servings: 4 servings


1 12-oz can of Solid White Albacore Tuna, drained
1 15-oz can of rinsed and drained black beans
1 lime, zested
1 tablespoon of lime juice
1 tablespoon of olive oil, extra virgin recommended
½ teaspoon of paprika
½ cup of red pepper, diced which is about half the pepper
½ teaspoon cumin
2 avocados, scooped and cubed (Save the shells!)
½-1 cup of chopped cilantro
½ of a small red onion, diced
2 teaspoon of jalapeno, chopped
1 teaspoon of salt and pepper to taste


Combine the lime juice, olive oil and paprika in a small bowl and mix until smooth.

Throw together tuna, red pepper, black beans, cumin, avocado, cilantro, red onion, jalapeno and salt in a large bowl.

Top the mixture with dressing. Make it more festive and serve the salad in left-over avocado shells. Enjoy!
