One Dish Tuna Casserole

2 cans (5 oz.) Bumble Bee® Solid White Albacore in Water, drained
8 ounces of fusilli pasta, preferably whole wheat
1 cup of chopped mushrooms
1 finely chopped small onion
1 and ¼ cup of fresh peas
2 cups of 1% milk
4 tablespoons of flour
3 tablespoons of butter
1 teaspoon of salt
1 tablespoon of extra-virgin olive oil
1 1/2 cups of a grated Italian cheese


Prepare oven by turning to high on the broil setting.

Bring salted water to a boil in a large pot. Add pasta noodles to boiling water and cook until tender. Add peas to the pot during the last minute of cooking. Drain and rinse pasta and pea mixture.

While pasta cooks, heat olive oil in an ovenproof skillet over high heat. Add chopped onion and mushrooms. Stir occasionally and cook for about 5 minutes. Add butter to pan so it melts, sprinkle flour in so it coats onions and mushrooms, and cook for about 4 minutes. Reduce heat to medium. Add milk and bring to a simmer, constantly stir. Mix in drained tuna and 1/2 cup of cheese until mixture is evenly incorporated. Remove from heat.

Stir cooked noodles and peas into skillet.

Sprinkle remaining cheese onto casserole. Broil until cheese starts to bubble and casserole is lightly browned on top, about 5 minutes.
