Linguine with Citrus and Salmon

The bright flavors of lemon juice and lemon zest melt into olive oil glazed linguine and offer the perfect flavor companionship to tender chunks of premium salmon. This dish leaves you satisfied, without feeling weighed down.

1 can (5 oz) Prime Fillet® Atlantic Salmon, drained and flaked

4 ounces dry whole wheat linguine

4 teaspoons olive oil

1 clove garlic, minced

1 tablespoon fresh lemon juice

1 1/2 teaspoons lemon zest

1/4 teaspoon salt

Dash cayenne pepper

2 tablespoons chopped flat leaf parsley


Cook pasta according to package instructions. Stir together olive oil, garlic, lemon juice, zest, salt, and cayenne pepper. In a medium bowl toss pasta with lemon juice mixture to coat. Gently stir in salmon and parsley.
