Lightened Up Crab Bisque

In just 25 minutes, this creamy restaurant style crab bisque, finished off with real dry sherry, will transport you to Maryland crab country right in your own kitchen.

1 can (6 oz) Fancy Lump Crab Meat

1 tablespoon butter

1 tablespoon canola oil

2 tablespoons whole wheat flour

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons finely chopped celery,

2 tablespoons finely chopped onion

1 can (12 oz) low-fat evaporated milk, divided

1 tablespoons clam juice

2 tablespoons dry sherry (not cooking sherry)


In a large saucepan, melt butter and oil over a low heat. Stir in flour, salt, black pepper, onion, and celery until combined, about 5 minutes. Stir 3/4 cup of the evaporated milk and clam juice into the pan. Mix in crab meat. Turn the temperature to medium heat and continue stirring until the mixture thickens, about 10-15 minutes. Blend the remaining evaporated milk and sherry into the mixture, cooking and stirring for another 2 minutes until heated through. Serve immediately.
