Keto Tuna Melt with Zucchini

The tuna melt is an old favorite, but it can get unhealthy if you let it. This keto tuna melt with zucchini recipe eliminates the bread and ups the veggies for a healthier twist on the tuna melt classic. Made with Bumble Bee® Solid White Albacore Tuna in Water and four other ingredients, this recipe is perfect for a lot of people or to meal prep in advance for a busy week.

2 (5-oz) cans of Bumble Bee® Solid White Albacore Tuna in Water
1 teaspoon garlic powder
1 tablespoon of dried onion, minced
3/4 cup of shredded cheddar cheese
4 fresh zucchinis
1 cup sour cream, optional garnish
1 cup of green onion, optional garnish
3 tablespoons of hot sauce, optional garnish


Preheat your oven to 450 degrees. Wash zucchini and slice in half – length wise (aka hotdog style). Use a wooden spoon to scoop out the center and seeds of the zucchini. Place skin side down on foiled baking sheet. Drain the can of tuna and scoop into mixing bowl. Combine with the onion, garlic and most of the cheese.

Fill the zucchini boats with the tuna mixture and place in oven for 7 minutes. Take out of oven and sprinkle any remaining shredded cheese on top. Place back in oven for 3 minutes. Remove from oven and let cool before serving. You can add optional toppings like sour cream or Tapatio. Enjoy!
