Hearty Salmon-Vegetable Chowder

A most satisfying and robust delicious chowder!

Prep Time: 30 minutes
Servings: Serves 6


1 can (14.75 oz) Salmon, drained and flaked (remove skin & bones as desired)
1/2 cup chopped onion
1/2 cup diced celery
4 tablespoons margarine
3 tablespoons flour
4 cups milk
1 (16 oz.) package frozen mixed vegetables
2 cups diced potatoes, cooked
2 teaspoons salt


In a pot, cook onion and celery in margarine until tender. Blend in flour, stirring constantly. Stir in milk, bring to a boil, cooking until mixture thickens about 3 -4 minutes. Add frozen vegetables and bring to a boil. Simmer 10 minutes or until vegetables are tender. Stir in salmon, cooked potatoes and salt. Cook 2 minutes until heated through.
