Easy Southern Chicken Pot Pie

Servings: Serves 6


2 cans (10 oz) Premium Chicken Breast Chunk in Water, drained

1 can (14.5 oz) sliced carrots

1 can (15 oz) green peas

1 can (10.5 oz) chicken broth

1 can (10.75 oz) cream of mushroom soup

1/3 cup flour

1/4 teaspoon poultry seasoning or sage

1/2 stick butter or margarine, melted

Pastry topping:

1 cup all purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1 cup milk


Prepare casserole dish (2 1/2 quart or 9 inch deep dish pie) with cooking spray. Place chicken chunks, carrots and green peas in bottom of casserole dish. In medium bowl, combine broth, soup, 1/3 cup flour and seasoning. Pour mixture over chicken and vegetables in casserole dish. Pour melted butter evenly over top. In separate bowl, combine flour, baking powder, salt and milk, mix with spatula or whisk. Pour liquid flour mixture evenly over top of casserole. Do not stir! Bake at 350 degrees F for 45 minutes or until golden brown. Remove from oven and let set 5 minutes. Serve with a salad for a complete meal.
