Dilled Tuna Patties

2 cans or pouches (5 oz) Tuna, drained and flaked

3 large raw eggs

1 1/2 cups plain dry bread crumbs

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh chives

1 teaspoon grated lemon peel

1 tablespoon lemon juice

1/4 cup olive oil

4 sandwich rolls

Lemon wedges and dill sprigs to garnish


Combine tuna, 2 eggs, 1/3 cup bread crumbs, dill, chives, lemon peel and juice. Shape into 4 patties. Beat remaining egg in bowl. Place remaining crumbs on plate. Dip patties into crumbs, turning to coat both sides, then into egg and back into crumbs. In large skillet, heat oil over medium-high heat. Cook patties 3 minutes per side until golden brown. Serve on rolls with lemon wedges and dill.
