Curry Chicken Tea Sandwiches

Servings: Serves 8


1 can (10 oz) Premium White Chicken Chunk in Water, drained

1 hard boiled egg, chopped

1/3 cup chopped celery

2 tablespoons sweet pickle relish

2 teaspoons curry powder

1 teaspoon paprika

2 tablespoons lemon juice

1/3 cup fat free mayonnaise

Seasoned salt to taste (optional)

16 slices bread (use whole grain wheat or pumpernickel or white)


In medium bowl, combine chicken, eggs, celery, relish, curry, paprika, lemon juice and mayonnaise, mix thoroughly. Add seasoned salt to taste. Spread the chicken mixture evenly to cover 8 bread slices. Close sandwich with another bread slice. Cut off and discard the crusts, then cut each sandwich diagonally into quarters. Arrange on platter to serve. Garnish with lemon and celery tops as desired.

Yields 2 cups chicken mixture. Makes 32 Tea sandwiches
