Cream of Crab Soup

Servings: Serves 4


4 cans (6oz) Crabmeat, drained

1 vegetable bouillon cube

1 cup boiling water

1/2 cup chopped onion

1/4 cup margarine

2 tablespoons all"êpurpose flour

1/2 teaspoon garlic salt

1/4 teaspoon celery salt

1/8 teaspoon ground black pepper

1 tablespoon hot sauce

1 quart low fat milk

2 tablespoons corn starch

Italian parsley for garnish


In 3-quart saucepan, saute onion in margarine until tender. Blend in flour and seasonings. Dissolve bouillon cube in water, adding to saucepan. Combine milk and cornstarch, add to saucepan mixture. Continue to cook over medium heat stirring constantly, until mixture is slightly thickened. Add crabmeat and heat thoroughly, but do not boil. Garnish with parsley as desired.
