Classic Tuna Nicoise Salad

The Classic Tuna Nicoise Salad is as far from boring as it gets. Made with Bumble Bee® Chunk White Albacore in Water this salad combines simple ingredients for a delicious meal. Add color and flavor to your salad for your next lunchtime meal.

Prep Time: 20 minutes
Servings: 4 servings


1 (5 oz.) cans Bumble Bee® Chunk White Albacore in Water
4 eggs, hard boiled and sliced
16 oz of green beans
2 oz of anchovy fillets, drained
1 large head of lettuce
6 medium potatoes, Yukon gold
1/2 cup of black olives
3 tbsp of olive oil
2 tsp capers
Salt and pepper to taste

Oil and Lemon Dressing
1/2 cup of olive oil
1/4 cup of parsley, chopped
1/2 tbsp of Dijon mustard
1/2 tbsp of shallots or scallions, finely minced
1/2 lemon, zested and juiced
1/4 tsp of salt


Cook green beans for 4-5 minutes in salted boiling water. Drain and place green beans in an ice bath. Steam potatoes on the stove or in the microwave. Let cool and slice into chunks about 1/4 inch.

For dressing, mix lemon zest, salt, pepper, mustard, shallots, lemon juice, and parsley. Shake in a tightly closed container. Pour in olive oil and shake. Add more lemon, salt, and pepper as needed.

Toss green beans and potatoes in dressing. Salt tomatoes.

Drain tuna of water and separate chunks. Drizzle a spoonful of dressing over the tuna.

Pull apart lettuce leaves and place on a serving plate. Top with strips of olives, tomatoes, green beans, tuna with capers, potatoes, and eggs

Place filets of anchovy on top of tuna.

Serve immediately or cover and refrigerate.
