Clam ‘n Corn Chowder

Servings: Makes 6-8 servings. Makes about 2 quarts.


1 can (10 oz) Whole Baby Clams

3 slices bacon, diced

1 large clove garlic, pressed

1 1/2 cups finely chopped onion

2 cups Snow's by clam juice

1 cup peeled, diced potatoes

2 cups half & half cream

1 package (10 oz) frozen whole kernel corn, thawed

1 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon thyme, crumbled

1/8 teaspoon paprika

Chopped parsley for garnish


In a large saucepan, brown bacon. Drain fat, reserving 1 tablespoon. Add garlic and onion and saute until onion is soft. Stir in reserved clam liquid, clam juice and potatoes. Simmer 15 minutes until potatoes are tender-crisp. Add clams, half and half, corn, salt, pepper, thyme and paprika. Simmer (do not boil) 3-5 minutes or until heated through. Garnish each serving with chopped parsley as desired. Makes about 2 quarts.
