Cilantro Lime Shrimp Tacos



The sweet and savory flavors of mango avocado salsa are a perfect complement to richly seasoned cumin spiced shrimp. Avocado and Greek yogurt add crave worthy creaminess with healthier fats than sour cream.

Ingredients

2 cans (4 oz) Medium Shrimp, drained

2 cloves garlic, minced

1 avocado, finely chopped

3/4 cup mango, chopped

1/2 cup tomato, chopped

3 tablespoons fresh cilantro, chopped

2 tablespoons lime juice

1 cup finely chopped red or orange bell pepper

2 teaspoons olive oil

1/4 teaspoon salt, divided

1/4 teaspoon paprika

1/4 teaspoon cumin

1 tablespoon warm water

8 soft corn tortillas

1/2 cup low-fat Greek yogurt

1 teaspoon chipotle chilies in adobo sauce


Directions

In a medium bowl, combine garlic, avocado, mango, tomato, cilantro, and lime juice. Set aside. In a medium saute pan, saute red peppers in olive oil over medium heat until soft, about 3 minutes. Add shrimp, 1/3 teaspoon salt, paprika, cumin, and warm water. Cook an additional 1 minute until shrimp are heated. Heat tortillas in the microwave for 30 seconds covered with a damp paper towel or in the oven at 200 degrees F, until warm, about 5 minutes. Combine Greek yogurt with chipotle sauce. Arrange the shrimp and pepper mixture in the center of each tortilla, topping with mango salsa and chipotle yogurt sauce.
