Chipotle Tuna & Black Bean Burrito



This burrito includes all of the comforting flavors of Mexican takeout but is lighter in calories and loaded with fiber. Chipotle pepper infused tuna takes the flavor and heat up a notch, while cool Greek yogurt is the perfect substitute for sour cream to help cut saturated fat.

Ingredients

1 can (5 oz) Prime Fillet® Albacore Tuna with Chipotle & Olive Oil, reserve 1 tablespoon of oil

1/2 medium red bell pepper, sliced

1/4 yellow onion, sliced

1 teaspoon chopped garlic

1/3 cup black beans

2 (8 inch) whole grain tortillas

2 tablespoons shredded reduced fat Cheddar cheese

2 tablespoons salsa

2 tablespoons low-fat plain Greek yogurt

2 tablespoons chopped cilantro, divided


Directions

In a medium sized skillet, heat 1 1/2 teaspoons of oil reserved from tuna over medium high heat. Add peppers, onion, and garlic and saute until soft, 5 minutes. Turn heat down to low. Gently stir in tuna, black beans, and 1 tablespoon cilantro, cooking until heated through, 2 more minutes. Add tuna mixture to the center of the tortilla, sprinkle cheese over the top evenly. To roll burrito, fold in the two ends first, then roll until sealed. Top with salsa, yogurt, and remaining cilantro.

    I just tried the chipotle tuna and black bean burrito and I thought it was excellent. I didn’t know what to expect very very flavorful and I would do it again.
