Cheesy Tuna Enchiladas

Weeknight dinners can easily put a stressful damper on your day, but they don’t have to. This Cheesy Tuna Enchiladas recipe features Bumble Bee® Solid White Albacore Tuna, a zesty red enchilada sauce, and is on the table in just 30 minutes to feed your family in a pinch. You can also store the garnishes separately and pack up the leftovers for a quick and delicious lunch.

3 5-oz. cans of Bumble Bee® Solid White Albacore Tuna
12 tortillas, flour or corn
1 cup of cheddar cheese, shredded
2 cups of red enchilada sauce
1 cup of sour cream, alternatively use greek yogurt for a low-fat recipe
¼ cup of salsa verde, or green salsa
1 cup of lettuce, shredded for garnish
1 avocado, sliced for garinish


Start by preheating your oven to 350 degrees. Combine Bumble Bee® Solid White Albacore Tuna, green salsa, and sour cream or greek yogurt in a medium sized mixing bowl. Leave some sour cream of greek yogurt for garnish. Warm tortillas for 1 minute in the microwave.

Fill each warm tortilla carefully with tuna mixture before rolling. Place each enchilada into a baking dish until the dish is full. Cover the rolls with red enchilada sauce and sprinkle cheddar cheese on top. Place the enchiladas in the oven and bake for 20 minute. Serve with your favorite garnishes like shredded lettuce, sour cream or yogurt, and avocado. Enjoy!
