Asian Salmon Soup Bowl

One of our favorite dishes for its ease of preparation and flavor profile, this soup deserves a standing ovation. With just a few simple ingredients like snow peas, carrots, pasta and tuna, this dish will warm you and delight you.

Servings: Serves 2


1 can or pouch (5 oz.) Pink Salmon, drained and flaked

1 (14 ounce) can reduced sodium chicken or vegetable broth

1 1/2 cups water

1 tablespoon lime or lemon juice

2 teaspoons grated fresh ginger

1/4 teaspoon crushed red pepper (optional)

2 ounces dry vermicelli pasta (or soba/buckwheat noodles), broken in half

1 medium carrot, thinly sliced

1 cup snow peas, halved diagonally

2 green onions, sliced

Chopped cilantro for garnish

Salt and pepper to taste


In saucepan, bring broth, water, lime juice, ginger and red pepper to a boil. Stir in pasta and carrot; simmer 4 minutes. Add salmon, snow peas and green onion and continue simmering for about 2 minutes, until heated through. Garnish with chopped cilantro.
