Salmon Spinach Frittata

1 can (14.75 oz) Salmon, drained and flaked (remove skin & bones as desired)

12 large fresh eggs, beaten

1 pint fat free cottage cheese

1 package (10 oz) frozen chopped spinach, thawed and drained

1 teaspoon dry basil

1/8 teaspoon cayenne pepper


Preheat oven at 375 degrees F. Prepare 9 x 13 inch baking dish with non-stick vegetable spray coating. Combine salmon, eggs, cottage cheese, spinach, basil and cayenne pepper. Pour mixture into prepared baking pan. Bake for 30 minutes or until frittata is set.
