Tuna Quinoa Salad

Servings: 3-4 Servings


1 can or pouch (5 oz) Tuna, drained and flaked

2 cups cooked quinoa

1/4 cup onion, diced

1 red pepper, diced

1 carrot, diced

4 tablespoons olive oil

2 teaspoons white wine vinegar

1/2 teaspoon lemon zest


Cook the onions in 1 Tbsp. of olive oil over medium heat until translucent. Place cooked quinoa, cooked onions, tuna, diced red pepper and diced carrot in a large bowl and mix thoroughly. Add in the olive oil, vinegar and lemon zest, and stir until combined. Season with salt and pepper to taste. Chill overnight in the refrigerator. Serve with lemon and crackers.
