Tuna Avocado Melt Quesadilla

2 cans (5 oz) Tuna, drained and flaked

1 tablespoon fresh lime juice

2 tablespoons red onion, finely chopped

Salt and pepper, to taste

4 (10 inch) flour or whole wheat tortillas

1 ripe avocado, seeded and sliced

1 1/3 cups shredded Mexican cheese blend (or a mix of sharp cheddar and pepper jack cheese)

Pico de gallo, for serving


In a medium bowl, combine tuna, lime juice, red onion, salt and pepper, and mix well. In a non-stick skillet coated with cooking spray, heat tortilla over medium heat. Place 1/4 tuna mixture on one half of tortilla, top with avocado slices and 1/3 cup cheddar cheese, and fold tortilla over. Cook for 1 to 2 minutes until tortilla turns golden brown; flip and cook the other side until browned and cheese is melted. Repeat with remaining ingredients. Cut into wedges and serve with pico de gallo.
