Corn Arepa with Tuna and Avocado Salad

Arepas are a Venezuelan staple. They are corn cakes made from an easy-to-find precooked corn flour called “masarepa”. You can top the arepas with this refreshing and flavorful tuna and avocado salad or prepare them larger and fill the arepas with the salad. Serve this recipe at your next cocktail party, or try it today for lunch or dinner! It’s even great for kids!

Prep Time: 20 minutes
Servings: 10-12 small arepas


Ingredients for the salad:

1 can (5 oz) Solid White Albacore Tuna in Water, lightly drained

2 tablespoons olive oil

1/2 white onion, small and diced

1 Hass avocado, peeled, seeded and diced

Juice of 1/4 lemon

2 tablespoons of chopped cilantro

1 tablespoon of Greek yogurt

Salt and pepper to taste

Ingredients for the arepa:

1 cup corn arepa flour (masarepa)

3/4 teaspoon salt

1 1/4 cups warm water


To make the arepa:

In a deep bowl, mix the corn flour and salt. Add the warm water little by little. Using your hands, start to mix everything slowly. Keep a steady circular motion while mixing everything together without allowing it to crumble. Mix until you have a homogeneous mixture that does not stick to your hands. With your hands, divide the dough into equal balled portions then press between the palms of your hands to create a flat patty or “arepa” shape. Place the arepas in a pan or flat non-stick skillet at medium heat and cook for approximately 4 minutes on each side. Cook until they are golden on each side. When ready, remove from heat and set aside.

To make the salad:

In a medium saute pan, add the olive oil and onion and cook until translucent. Add the tuna and saute for 3-4 minutes. Transfer the saute to a bowl and allow it to cool briefly. Once cooled, add the avocado, lemon juice, cilantro, yogurt and salt and pepper to taste. Top the arepas with the salad or, if you prepared larger arepas, stuff them with the mixture.
