Tuna and Pesto Cucumber Wrap

Tuna salad made with basil-sunflower pesto is wrapped in thin slices of cucumber, sushi-like, to create the perfect flavorful bite. These are a great tasting and appetizer perfect for parties or any time. Or, serve them with whole grain crackers or a side of brown rice for lunch.

1 can (5 oz) Prime Fillet® Solid White Albacore in Water, drained and flaked

1/2 cup fresh basil leaves

1/2 cup fresh flat parsley leaves

Juice of one lemon

1/2 cup toasted pine nuts

1/2 cup salted sunflower seeds

1 clove garlic

1/2 teaspoon salt

1/2 cup extra virgin olive oil

1 cup arugula leaves, roughly chopped

1 English cucumber


In a blender or food processor, combine herbs, lemon juice, pine nuts, sunflower seeds, garlic, and salt. Pulse until all components are small, crumb-sized chunks. With machine running, drizzle in olive oil and puree until consistency is even to desired level of smoothness. Scrape into a mixing bowl. Toss tuna with arugula and pesto until evenly combined. Chop cucumber in half across the middle, creating two 6"ԝ long pieces. Starting with a long knife parallel to the length of the cucumber, gently carve just below the skin, moving the knife to fillet a large piece and turning the cucumber as needed. (In effect, you are cutting to a wide spiral around the center core of the cucumber.) Alternatively, use a mandolin or straight peeler to shave cucumber end to end to form long ribbons. Place a small amount (~1 Tablespoon) of the tuna mixture on the end of a cucumber ribbon, and roll up until the end of the ribbon is closed in a circle. Place on a serving plate, and repeat with the rest of the ribbons.
