Tuna Cakes (Protein Style)

Crispy and flavorful, these easy-to-make albacore tuna cakes will make you look and feel fancy. Low on carbs and high on nutrition, this tuna cake recipe is a clean and delicious new way to enjoy tuna. These can be made with gluten-free bread crumbs.


3 (5 oz) cans Bumble Bee Solid White Albacore, drained
⅓ cup panko crumbs
1 large egg
½ medium yellow onion, diced
2 garlic cloves, minced
3 tbsp cilantro leaves, chopped
1 tbsp pickled jalapeño slices, minced
5 romaine lettuce leaves
1 cup pico de gallo salsa
1 lime, juiced
½ tsp salt
½ tsp pepper


Place drained tuna and all remaining ingredients except lettuce and pico de gallo in a large bowl. Stir together. Use a half-cup measuring spoon to pack and form 4 or 5 tuna cake patties. Lightly grease and heat a large nonstick pan to medium-high heat. Add cakes to pan and cook 3 minutes, or until bottom is lightly browned and a crust is formed. Carefully flip and cook other sides until browned. Remove and place one on each washed and dried lettuce leaf. Top with pico de gallo and garnish with extra cilantro before serving. Leftover tuna cakes can be stored in the fridge for up to three days.
