Family Omelets



An old favorite, brought back just for you!

Prep Time: 20 minutes
Servings: Serves 4

Ingredients

1 can (14.75 oz) Salmon, drained and flaked (remove skin & bones as desired)

2 small zucchini, shredded

1 cup chopped green onion

1 tablespoon vegetable oil

4 tablespoons margarine

8 tablespoons water

8 large fresh eggs

1 teaspoon dry dill weed

1/4 teaspoon salt

1/4 teaspoon ground black pepper

2 tablespoons light sour cream


Directions

Heat vegetable oil in sauce pan and saute zucchini and green onion until tender. For each omelet, melt 1 tablespoon margarine in 10 inch omelet pan. Beat 2 eggs with 2 tablespoons water and 1/4 teaspoon dill weed, salt and pepper to taste. Pour into hot pan, lift set edges of omelet, push towards center of pan to allow uncooked mixture to flow to edges. Continue until eggs are set and slightly moist. Fill with 1/4 of the salmon and vegetables, fold omelet in half. Makes 4 omelets.
