Savory Southwest Tuna Cakes

2 cans or pouches (5 oz) Bumble Bee® Tuna, drained and flaked
1 cup crushed tortilla chips
1 cup Mexican-blend shredded cheese
2 large eggs, beaten
1/2 cup chopped red onion
1/3 cup finely chopped red bell pepper
1 can (7 oz) chopped green chilies
2 teaspoons Mexican seasoning blend
2 tablespoons chopped fresh cilantro
2 tablespoons vegetable oil for frying
Combine tuna, crushed chips, cheese, eggs, onion, bell pepper, chilies, seasoning and cilantro. Scoop out 1/3 cup of tuna mixture to form into patties. In skillet, cook patties in oil over medium heat for 2 minutes each side or until golden brown. Serve with salsa, sour cream or guacamole. Makes 12.
