1 5 oz can of Solid White Albacore Tuna In Water, drained
2 cups of cauliflower, riced
½ cup of sweet bell peppers, chopped
½ cup of mango, chopped
½ cup of olive oil
½ cup of cucumbers, chopped
¼ cup of red onion, chopped
¼ cup of cilantro, chopped
¼ cup of parsley, chopped
¼ cup of blueberries
¼ cup of lime juice
¼ cup of orange juice
1 teaspoon garlic, minced
1 teaspoon of salt & pepper to taste


Spoon riced cauliflower into a large bowl and flatten out until smooth. Mix cilantro and parsley together. Arrange on top of the riced cauliflower in the shape of a cross.

Add chopped peppers into one of the 4 empty sections. Repeat with onions, blueberries, and mangoes in the rest of the empty sections. Spoon chopped cucumbers and tuna into the center. Top with avocado slices.

Mix orange juice, lime juice, olive oil, garlic, salt, and pepper together to make the dressing. Drizzle dressing over the bowl or serve it on the side. Enjoy!
