Stuffed Avocado with Tuna & White Bean Salad
Three superfoods in one small but mighty meal. Stuffed with protein-packed Solid White Albacore Tuna and white beans, these avocados make for the perfect post-workout snack or mid-day fuel boost.
- 2 cans Bumble Bee Solid White Albacore Tuna
- 1 can cannellini beans
- 1/3 cup red onion, finely chopped
- 1 Roma tomato, chopped
- 1/3 cup fresh parsley, chopped
- 2 avocados
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- ¼ teaspoon salt
- ¼ teaspoon white pepper
In a large mixing bowl whisk together dressing ingredients until combined.
Drain Bumble Bee Tuna and drain and rinse beans.
To dressing, add tuna, beans, red onion, tomato, parsley and gently stir until combined.
Cut avocados in half and remove pits.
Divide tuna mix among 4 avocado halves.
