Mediterranean Tuna Melt Quesadilla

We can all agree that nothing beats a cheesy quesadilla, though sometimes we just need something a little more sophisticated—but just as quick. And even better when it pairs nicely with a crisp glass of Pinot Gris. We have just the recipe for you. Bumble BeeⓇ Mediterranean Herb & Spices Pouch Tuna, feta and mozzarella cheeses, kalamata olives, diced red onion, and tomato are layered into flour tortillas then cooked in a hot skillet with olive oil until golden, toasty, and oh so melty.
- 2 large flour tortillas
- 1 pouch Bumble BeeⓇ Mediterranean Herb & Spices Tuna
- ½ cup shredded mozzarella cheese (2oz)
- ¼ cup crumbled feta cheese (1oz)
- 1 Roma tomato, diced
- 2 tablespoons diced red onion
- 2 teaspoons olive oil
Place tortillas on a clean work surface and evenly distribute tuna, cheese, tomatoes, olives, and onion on one side of each tortilla. Fold the other half of each tortilla over ingredients and set aside.
In a large skillet over medium heat, warm oil. Add quesadillas and cook until golden brown on the bottom, 2-3 minutes. Flip and cook 2-3 minutes more until golden brown and cheese is melted.
Transfer quesadillas to a cutting board, and cut each into 4 wedges.
