Blackened Salmon Caesar Salad

Indulgent, decadent, yet nutritious, this healthful twist on an all-time favorite is surprisingly simple to make with our salmon, crisp lettuce, fresh Parmesan cheese, and creamy Caesar dressing all spiced up with a little Cajun seasoning.

Ingredients:

1 can (14.75 oz) Bumble Bee® Salmon, drained and flaked (remove skin & bones as desired)
2 tablespoons Cajun seasoning
1 tablespoon olive oil
8 large Romaine lettuce leaves
¼ cup Caesar dressing
½ cup shredded Parmesan cheese
1 cup croutons
4 lemon wedges

Directions:

Sprinkle Cajun seasoning to coat flaked salmon, roll in seasoning to cover as needed.   In skillet, saute seasoned salmon in hot olive oil for 3 - 5 minutes until browned or blackened on edges. Line plate with romaine lettuce leaves, top with blackened Cajun salmon, Caesar dressing, Parmesan cheese and croutons.  Garnish with lemon wedges.
