Tuna Melt

Servings: Serves 4


2 cans or pouches (5 oz) Tuna, drained and flaked

1/3 cup mayonnaise

1 1/2 tablespoons sweet pickle relish

1 1/2 tablespoons minced onion

1/2 tablespoon mustard

4 English muffins, split and toasted

8 slices tomato

8 slices American, Cheddar, Swiss or Monterey Jack cheese

Fresh fruit (optional)


Combine tuna, mayonnaise, relish, onion and mustard. Spread tuna mixture on each toasted English muffin half. Top with tomato slice and cheese. Broil 4 – 5 minutes until cheese melts. Serve with fresh fruit, if desired.
