Ingredients

  • 1 Bumble Bee Tuna Jalapeno Pouch (1 SP)
  • ¼ cup frozen corn, defrosted
  • ¼ cup black beans (1 SP)
  • ½ cup cooked white rice (3 SP)
  • ½-1 teaspoon cilantro, chopped
  • 1 teaspoon lime juice
  • 1 cup romaine lettuce, shredded
  • ¼ cup fat-free pico de gallo or chunky salsa
  • 1 teaspoon jalapeño peppers, optional
  • ¼ - ½ lime

Directions

Heat up Bumble Bee Tuna, corn and black beans (we microwaved each individually).

Toss cooked white rice with cilantro and lime juice.

Assemble a bowl with lettuce, rice, Bumble Bee Tuna, corn, black beans, salsa and optional jalapeños.

Squeeze lime on top as dressing.
