Kid-Friendly Tuna Quesadillas
We call this one kid-friendly, but it’s really a people friendly recipe. And it’s quick, easy, and downright delicious.
- 1 can Bumble Bee Chunk Light Tuna
- 1-2 cups Mexican blend cheese
- 1/8 teaspoon onion powder
- Optional: salt and pepper
- 2 teaspoons butter or cooking oil
- 2 flour tortillas
- 1 cup guacamole
- 1 cup grape tomatoes, halved
Drain Bumble Bee Tuna well and mix together in a bowl with cheese and onion powder.
Option to season with salt and pepper.
Over medium-low heat, grease large pan with 1 teaspoon butter or oil and place tortilla in flat.
Cover ½ tortilla with ½ tuna mixture then fold the tortilla in half. Cook for 2-3 minutes until cheese is melty.
Flip quesadilla and cook another 2 minutes.
Remove quesadilla from heat and repeat with other tortilla and remaining tuna mixture.
Cut each quesadilla into 4 triangles.
Place 2 or 4 triangles of quesadilla into each lunch box along with ¼ cup guacamole and ¼ cup tomatoes.
