Ingredients

  • 6 slices of bacon, cooked​
  • 5 eggs​
  • 2 cans Bumble Bee Chunk Light Tuna​
  • ½ cup onion, finely chopped​
  • 1 cup jack cheese, shredded​
  • 2 tablespoons milk​
  • ¼ teaspoon black pepper​

Baked Fries​:

  • 2 russet potatoes, cut into fries​
  • 1 tablespoon olive oil​
  • ¼ teaspoon sea salt​
  • 1/8 teaspoon black pepper​
  • 1/8 teaspoon paprika​
  • 1/8 teaspoon garlic powder ​

Directions

Preheat oven to 375°F and grease center 6-8 muffin cups. ​

On a baking sheet, toss sliced potatoes with oil, salt, pepper, paprika and garlic powder.​

Bake on bottom rack for 60-70 minutes until golden on one side. ​

Meanwhile, chop cooked bacon and combine in a large bowl with eggs, Bumble Bee Tuna, onion, cheese, milk and pepper. ​

Divide among prepared muffin cups.​

Bake on center rack for 25-30 minutes, or until eggs are no longer runny, and remove from oven.​

When potatoes are done, remove from oven and let sit 5 minutes before using a spatula to gently separate them from pan.​
