Tuna Bacon Muffin Cups & Baked Fries



You can’t beat breakfast for dinner! Enjoy Bumble Bee Wild Caught Chunk Light Tuna In Water with eggs, bacon, and cheese!

Prep Time: Greater than 45 minutes
Servings: 4

Ingredients

6 slices of bacon, cooked
5 eggs
2 cans Bumble Bee Chunk Light Tuna
½ cup onion, finely chopped
1 cup jack cheese, shredded
2 tablespoons milk
¼ teaspoon black pepper

Baked Fries
2 russet potatoes, cut into fries
1 tablespoon olive oil
¼ teaspoon sea salt
1/8 teaspoon black pepper
1/8 teaspoon paprika
1/8 teaspoon garlic powder


Directions

Preheat oven to 375°F and grease center 6-8 muffin cups.

On a baking sheet, toss sliced potatoes with oil, salt, pepper, paprika and garlic powder.

Bake on bottom rack for 60-70 minutes until golden on one side.

Meanwhile, chop cooked bacon and combine in a large bowl with eggs, Bumble Bee Tuna, onion, cheese, milk and pepper.

Divide among prepared muffin cups.

Bake on center rack for 25-30 minutes, or until eggs are no longer runny, and remove from oven.

When potatoes are done, remove from oven and let sit 5 minutes before using a spatula to gently separate them from pan.
