Spinach, White Bean & Tuna Soup Recipe by Sam the Cooking Guy®

One of the comforts of life is knowing there are tuna pioneers out there like professional chef Sam the Cooking Guy® with the foresight and vision to combine Bumble Bee® Solid White Albacore Tuna, cannellini beans, and fresh spinach into the most miraculous of soups. Before we gush anymore, read on to see how to make it.
- 1 – 12oz can Bumble Bee® Solid White Albacore Tuna
- 1 tablespoon olive oil
- 1 small yellow onion, finely chopped
- ½ garlic clove, minced
- 4 cups chicken broth
- 1 teaspoon Kosher salt
- ¼ teaspoon black pepper
- 1 – 15oz can cannellini beans, drained and rinsed
- 2 cups packed fresh spinach leaves, rough chopped (can substitute bok choy for extra crunch)
- Lemon wedges for serving
Heat oil in a medium pot and add onion. Cook about 5 minutes until softened, then add garlic and cook 1 minute more.
Add broth, salt, pepper, tuna and beans. Bring to a slight boil, then turn down and simmer about 15 minutes.
Stir in spinach and cook until fully wilted, about 2 minutes.
Serve hot with lemon wedges.
